I've been tracking my weight every day now for several months and it has not been inconvenient. This surprised me. Many years ago when I lived in San Francisco I bought a smart scale to track my weight without having to do any manual data entry.
The thing is, it turns out manual data entry of one single float can be very quick, but what's more, you can see the graph over time without having to get your data into a spreadsheet.
There are two factors that make this work in my case:
1. Apple Health[^1] gives you the trend graph over time if you can input the data
2. You can ==create a shortcut== to insert rows into Apple Health
The shortcut is was the real unlock. There is a button on my home screen that will popup a simple numeric entry field when tapped. Then I hit OK and it's done. The whole interaction takes 3 interactions if I'm already on the home screen, which is less than most tasks on a phone.

This is decidedly more work than simply standing on the scale and being done with it. However, I also don't have to worry about:
- Connecting a smart device to wifi.
- What data that device is sending, and to where.
- Using some lame app that the manufacturer requires you to use so they can send you push notifications.
[^1]: I don't think much of Apple Health overall, but it certainly fits this "graph my weight over time" use case well enough.
